Messer-Schärf-Set, 3-teilig, 6cm breiter Korund 220/400 (240/1000JIS)+ Leder + Polierpaste
1x Abziehstein Korund Kombi 200 x 60 x 25mm, 220/400er Körnung
hergestellt von Zische, in Deutschland, Edelkorund EW220/EW400 -FEPA, europäischer Körnungsnorm entspricht vom Schliffbild her einem 240 / 1000
japanischen Wasserstein,
1x Kautschuk-Unterlage 5mm für Schleifstein
plus 1x Lederstreifen 200 x 50 (Echtleder) +
und 1x Feinschleifpaste Grau Ultrafein 5ml
Schärf-Set ….zusammengestellt speziell für die Bedürfnisse des Messerschärfens!
So kann das Messer auf dem Korund-Kombinationsstein ( grob und fein ) geschliffen und danach mit Feinschleifpaste auf dem Leder abgezogen werden!
Mit der groben Seite des Schleifsteines wird die Schneidengeometrie hergestellt, mit der feinen Seite des Schleifsteines wird die Schneide noch feiner geschliffen.
Der beim Schleifen entstehende Grat wird dann mit dem Lederriemen, der sehr sparsam mit etwas Polierpaste behandelt wurde, entfernt.
Das Ergebnis: endlich wieder eine sehr scharfe Schneide, die durch Fleisch und Gemüse nur so gleitet.
